Watermelon Salad with Wicked Good Spice Mixed Berry Balsamic Vinegar

Ingredients:

3 cups of watermelon, cut into bit sized pieces

1 cup of blueberries, washed

1 medium red onion, finely diced

1 cup of feta cheese crumbles

2/3 cup of Wicked Good Mixed Berry Balsamic Vinegar


Directions:

Place watermelon,blueberries and red onion in a salad bowl and gently toss to mix

Add Mixed Berry Balsamic Vinegar and feta cheese. Toss to mix and serve.

Wicked Good Spice Cucumber Salad with Pear Balsamic Vinegar

Ingredients:

2 English cucumbers, diced

1 medium red bell pepper, deseeded and diced

4 plum tomatoes, seeds removed and diced

1 medium red onion, finely diced

Salt and pepper to taste

1/3 cup of Wicked Good Pear Balsamic Vinegar

Directions:

Place all of the ingredients in a medium size bowl and mix together. Add the Pear balsamic and salt and pepper and mix well.

Serve with grilled chicken, seafood or shrimp.


Watermelon Feta Cheese Stacked Salad with Wicked Good Spice Mixes Mixed Berry Balsamic Vinegar

Ingredients:

8 oz of feta cheese, cut into four small squares (3" x 3" pieces)

1/2 large watermelon cut into 8 squares the same size as the feta

2 cups of arugula

1/2 cup of Wicked Good Mixed Berry Balsamic Vinegar

Salt and Pepper to taste

2 tsp of extra virgin olive oil


Instructions:

Place the mixed berry balsamic in a small sauce pan, turn heat to medium, and bring to a boil abd reduce to a simmeruntil thickened, about 5 minutes.

Toss arugula with olive oil and salt and pepper

Place watermelon squares on a serving platter, top each square with a square of Feta cheese and then top each one with a square of watermelon.

Place about a 1/2 cup of arugula and drizzle each square with the Mixed Berry Balsamic reduction

Wicked Good Spices Harvest Salad

Ingredients:

6 slices of applewood smoked bacon, cooked

2 hearts of romaine lettuce, chopped

1 Honey crisp apple, diced

1/2 cup of toasted pecans or walnuts

1/4 cup of blue cheese crumbles


Dressing:Whisk 1/3 cup of Wicked Good Spice Mixes Apple Balsamic Vinegar with one tsp of dijon mustard, 1/4 tsp of black pepper,1/4 tsp of pink salt and 1 tbsp of honey.

Whisk in 2/3 cup of extra virgin olive oil and blend thoroughly. If mixture seems too thick, you can whisk in some water.

Place salad ingredients into a large bow and toss with dressing and serve.


( You can switch up the salad ingredients and use any of our delicious balsamic vinegars to make the dressing!)


Wicked Good Spice Mixes Pear Salad

Ingredients:

10 oz of mixed greens

2 Pears (bosque or anjou), thinly sliced

1 cup of toasted pecans

1/2 cup of dried cranberries

1/2 cup of blue cheese


Dressing:

1/3 cup of Wicked Good Spice Mixes Pear vinegar

2 tbsp of dijon mustard

2/3 cup of extra virgin olive oil

1/4 tsp of pink salt and 1/4 tsp of black pepper


Instructions:

In a large bowl add greens, pears,dried cranberries and pecans

In another bowl, whisk together all of the salad dressing ingredients

Toss the greens, pears, dried cranberries and pecans.. Top with blue cheese and enjoy with soup and crusty bread


Spinach Salad with fresh strawberries and balsamic vinegar

Ingredients:

1 12oz bag of baby spinach

2 cups of sliced strawberries

1/2 red onion, thinly sliced

1/2 cup of feta cheese crumbles or blue cheese crumbles

1/2 cup of glazed pecans (see recipe below)

6 slices of of bacon, cooked and crumbled

2 grilled chicken breast, sliced


Dressing: Whisk together the first 4 ingredients; then whisk in olive oil.

1/3 cup of Wicked Good Spice Mixes Mixed Berry Balsamic Vinegar

1 tbsp of dijon mustard

1/4 tsp of black pepper

1/2 tsp of pink salt

2/3 cup of extra virgin olive oil


Glazed Pecans

 Preheat the oven to 350 degrees.


Place water, sugar, salt and pepper and "Pigs Can Fly" in a sauce pan and bring to a boil. add the pecans and stir to coat.

Place the nuts on a greased cookie sheet and place in the oven for 10-12 minutes until they are toasted.

1 1/2 cups of pecan halves

1/4 cup of coconut sugar

2 tbsp of water

1/4 tsp of salt

1/8 tsp of black pepper

1 tbsp of  Wicked Good Spice Mixes "Pigs Can Fly"


Place the baby spinach, red onion, strawberries, feta cheese, bacon, chicken and pecans in a large salad bowl. Toss with the dressing and serve.

Kale, Sweet Potato and Apple Salad  (You can substitute Baby Spinach or Arugula for the Kale.)

Ingredients:
4 cups of Kale or Baby Spinach or Arugula
2 cups of cubed sweet potato or butternut squash, roasted
1 large chicken breast, roasted and sliced thinly
3 tablespoons of dried cranberries
1 1/2 cup of diced apples ( Gala, Honey crisp or red delicious)
3 tablespoons of silvered almonds

For the dressing:
2/3 cup of extra virgin olive oil
1/3 cup of Wicked Good Spice Mixes Apple Balsamic Vinegar
1/2 tsp of pink salt
1/4 tsp of black pepper
1 tsp of Dijon mustard

Instructions:
In a small bowl whisk together salt and pepper and dijon mustard with the Apple Balsamic vinegar.
Whisk in the extra virgin olive oil and blend thoroughly.

Place Kale, Sweet potatoes,diced apples, dried cranberries in a large salad bowl  with dressing.
Put chicken breast and almonds on top of the salad and serve. Enjoy!






Wicked Good Caprese Salads!  So Easy to make and delicious!

Caprese Salads make a great appetizer or can even be an entree.


Ingredients:

2 16 oz of Fresh Mozzarella, slice into 32 pieces

2 large peaches, sliced

6  thin cantaloupe slices

6 slices of Prosciutto, cut in half, 12 pieces

1 Large Beefsteak tomato, sliced thinly

8 basil leaves

8 mint leaves

Wicked Good Balsamic Vinegars, (Vanilla Fig, Mixed Berry, Peach, Pear, Organic balsamic,Organic Blood Orange Balsamic)

Wicked Good Basil EVO

 Instructions:

Gather  dinner plates.

On the first plate, arrange the mozzarella with peach slices, layering and alternating, 1 slice of cheese then a slice of peach.

Sprinkle mint leaves on top and drizzle with Wicked Good Peach Balsamic Vinegar. 

On a third plate, do the same with the tomato and mozzarella adding a basil leaf, Drizzle with Wicked Good Organic Balsamic or Vanilla Fig Balsamic Mixed Berry Balsamic.

On the fourth plate,  do the same layering with mozzarella and cantaloupe,this time adding a piece of prosciutto. Drizzle with Wicked Good Vanilla Fig Balsamic.

Serve with crusty bread and enjoy!
