Mediterranean Grilled or Oven Roasted Vegetable
This dish is a great time saver for busy moms or couples. Make and then use all week long on top of pizza, pasta, or as a healthy, side dish. Also great cold, tossed into salads.
1 bunch of asparagus, stems peeled. Remove bottom 1/3
1 large zucchini, sliced
1 large vidalia onion sliced into rings
1 large red bell pepper
1 large yellow bell pepper, both sliced into strips
8 oz of any type of mushroom, whole
1 bunch of scallions, remove bottom part of bulb
1/2 cup of Extra Virgin Olive Oil
4 tbsp of Achille’s Heel Mediterranean Blend
1 tsp of Pink Himalayan salt ( or sea salt)
Place all cut and washed vegetables in a large roasting pan. Drizzle olive oil evenly over vegetables.
Sprinkle evenly with salt and Achille’s Heel Blend. Toss the vegetables until all are coated.
* At this point you can either GRILL until tender and slightly charred OR
ROAST at 350 degrees for approximately 40-45 minutes. Check after 20 minutes, as some vegetable will
cook more quickly than others.
